We have all heard the saying “you are what you eat”. According to the ancient Indian science of health and longevity Ayurveda, it sounds a little different. The basis of Ayurvedic nutrition is that we are the result not only of what we eat, but when, how and why we eat.

Ayurveda is a balanced approach to nutrition, which involves eating carefully, healthily and gratefully. Our food must be fresh, digestible, prepared with care and love and satisfying all our senses. We need to eat a variety of foods and spices that are visually appealing and fragrant.

Principles of nutrition according to Ayurveda

According to the ancient holistic system of Ayurveda, food and herbs are categorized by their qualities, tastes, how they affect our mind-body combinations and how they harmonize the three doshas – Vata, Pita and Kafa. Ayurveda recognizes six tastes and believes that we should have all these tastes in our diet every day.

The six flavors are:

  • cute
  • sour
  • salty
  • sharp
  • bitter

Every taste has qualities that will either increase or decrease doshas.

Sweet is heavy, sour is moist, salty is warm, bitter is cold, sharp taste is hot, and astringent is dry. Foods with dosha-like qualities will increase it, while food with dosha-opposite qualities will reduce it and we must strive for balance.

Ayurveda also prescribes to eat these flavors in a certain order, from sweet to astringent. This means eating sweets first to feel satisfied and digest food properly. Lack of all 6 flavors can lead to hunger, weight gain, lack of energy and illness.

Ayurveda encourages us to eat carefully, seasonally, organically and healthily. The way we eat and treat food can be reflected in other aspects of our lives.

If our food is full of life force, we will have the health and energy necessary for a full life. When we eat balanced meals with attention and gratitude, we adjust our bodies for optimal health.

Man eats with all his senses and therefore complete nutrition includes a variety of tastes, colors, shapes and aromas. If a person eats food that he does not enjoy, it will harm him.
