Main dishes are divided into 4 parts :

Bread

The bread in India is called chapati, roti or poori.
The main types of bread are:

  • Chapati – wheat flour, ghee or oil.
  • Jowar – jowar flour.
  • Roti – maida flour, ghee, sesame seeds.
  • Naan – maida flour, ghee, sesame seeds.
  • Poori – small round loaves of wheat flour or maida flour fried in oil.

Rice

In Ayurvedic cuisine, the rice is boiled in water and all the necessary spices, vegetables, meat or dal are added to it.

Examples of Ayurvedic rice dishes are:

  • Moong Dal Rice

Dry Curry

 

Dried curry dishes are prepared mainly from vegetables or meat, do not contain water and are consumed with bread.

Some types of dry curry dishes are:

  • Mutter paneer – peas, paneer (fresh cheese), oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Aloo gobi – potatoes, cauliflower, oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Chana Masala – boiled chana, oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Bhendi – okra, oil, green peppers, salt, onion, curry leaf.
  • Baingan – brinjal, oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Moong usal – boiled mung bean, oil, hot red pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Beetroot and carrot curry – red beets, carrots, oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Cabbage – grated cabbage, oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Cauliflower – grated cauliflower, oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Capsicum – pieces of capsicum, oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Gourd – pieces of gourd, oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Sprouts corry – all kinds of sprouts, oil, hot red pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Masura curry –masura (soaked overnight), oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Rajma curry – rajma (soaked overnight), oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Leafy vegetables such as spinach, mint, etc. – prepared with garlic, oil and salt, without water.
  • Meat / chicken curry – pieces of chicken or other meat, oil, hot red pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.
  • Scrambled egg – scrambled egg, oil, cayenne pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices.

Liquid Curry

Liquid curry dishes are made from vegetables and spices and contain water.

They are consumed mainly with rice, as the food becomes softer and easier to swallow.

Types of liquid curry dishes are, for example:

  • Fried dal – boiled dal (tur dal, mung dal), oil, hot red pepper, coriander powder, salt, onion, tomato, ginger, garlic paste, spices, water.
